Feel kind of bad for not taking any pictures of what I’ve been doing… Always too busy it seems… So here’s one.
Some days are better than others.
Yesterday, despite having one of our cooks to move on to greener pastures in Texas and another one of our cooks breaking his hand at the going away party following…was… Incendiary? I don’t know. I just had a good one after a string of a few bad ones.
I worked my station with my boss and killed it. Even had time to make a pretty decent staff meal.
I’ll be on 6 days for the time being since were shorthanded….
I’m exhausted, again, Needless to say even thinking about it.
I keep forgetting what I do is more about finesse and doing than thinking ahead sometimes. Writing about it is cathartic. Keeps me from thinking so much about being prepared for my day than bracing it.
Nothing like being lectured for twenty minutes about time management.
New menu items after two days off leave me a bit frazzled it seems.
Monday. If there were ever a more wretched word in the human vocabulary it would be Monday. It signifies a refresh in the week. A painful reminder that the weekend is over.
For cooks… It’s our Friday… We don’t coast or phone it in… It’s our busiest day of mise en place preparation. Because with our two days off… Someone else is going to be working your station. So that means leaving it set up for when you come back on Thursday… And in San Francisco Thursday is the new Friday… Scrambling to get set up after two days of rest is preventable.
My station partner Johnny will be charged with doing all the incidental things in my absence… Little things like making parsnip vinaigrette and purée-ing leek ashes in oil…etc. That said I shouldn’t be writing this right now…
I gotta get set up.
